Can you guess an apple variety by analysing the juice?

It is possible to determine the variety if you know the juice type (sweet, bittersweet, sharp, bittersharp), SG, TA, Tannins?

No. You also need to know other things like the apple shape, size and colour, its growth habit, its leaf pattern, its flowering and harvest time, distinctive aroma etc. Even then it can be really difficult. A guess may be wildly wrong 😟. 

Now in the 21st century though we do have DNA analysis which is (almost) definitive.
