Curious if anyone has used Sargent Crab Apple in cider. I have two trees and plan to press and at least test for taste, sugar and acid levels this coming year. I'd love to know if anyone else has any experience with these.

Is that the same as the M. sargentii? I used to use these crabs for pollination when I grew a lot of Jonagolds. Now I only have a few. Very, very small fruit, about half as big as a cherry pit, and super bitter.

Yes, I think it is the same one. I'm going to give it a shot. Not even sure my grinder can handle such small fruit.

Good luck! Maybe a cadidate for carbonic maceration?

Well, now that the fruit is ripe, I find it interesting that the two trees that I thought were the same have very different sized fruit. The ones in my hand are the ones I ended up picking as the bright red ones were even smaller.
Carbonic maceration was a fun thought...but I'm opting for freezing, then thawing and pressing.

I'll let you know how it goes.
