Hello Esteemed Group -

I am helping build a cider shop for ~ 1000g / yr, maybe up to 1500. It will include a bright tank for carbonation, and batches will be either 250 or 500g.

My question - will a 500g bright tank work on 250g of cider? I can't imagine a reason it wont work just because the headspace is increased to 50% (actually a bit more). But I want to be sure before continuing on this line of thinking.

I've searched here and not found a specific answer. From this discussion I think I'm interpreting that it will work.

Any additional information or direction to a better discussion would be very much appreciated.

Thanks
Matt

No problem.   The carbonation stone has to be submerged if you want the carbonation to happen quickly.   (It will also happen without the stone submerged, it will just take several days for the co2 to dissolve)  Just be sure to purge the headspace.  Purge all the headspace air by running co2 thru the stone with the top vent removed.   The co2 will form a blanket at the bottom that will displace the air.

Check the probrewer.com discussion boards for lots of brite tank know how.   Here's one of many:

The rotameter gas flow meter setup is they way to go.
