I've only been making cider from juice from a local mill but am wanting to start using Apples.  Is there a general measurement of volume of juice to expect from say 100lbs of apple? Most of the Apples I would expect to have access to are West Coast US dessert apple.

Thanks for any info.

It varies but 50-75% is a reasonable guide

We normally work on 70% on either a belt press or rack and cheese press. On the belt press you get a few more solids in the juice so the end amount of cider is slightly less.

E.g 1000KG = 700L of juice (although this juice weighs slightly more than 70% of volume is just easier to do the maths that way).

For really small volumes the amount may be much less due to waste in the system.

Andrew wrote some more details here about pressure to yield - www.cider.org.uk/press.htm

Thanks,
Ben

We use a speidel mill and a 40L hyrdopress and get around 55% yield.

We use a Kreuzmayr belt press and get anywhere from 65-75% of yield. It all depends on the apple variety and the state of the fruit. Obviously an apple stored for several month will have less yield.

Maybe a silly question, but when calculating press yields are we talking about the weight of pommace into press vs. weight of juice collected?
