Is anyone familiar with a method for post fermentation tannin titration?

I think the traditional permanganate titration would rapidly oxidize the ethanol before reacting with the tannins. If I knew the ethanol concentration, could I add a stoichiometric amount of permanganate, then continue with the titration?

I am asking, because I am very curious about how my ciders change during fermentation.

Thanks,
Nick

No the Loewenthal permanganate titration doesn’t oxidise the ethanol.  You can use it quite happily in wines and ciders.

The method is here http://www.cider.org.uk/tanmeths.htm#lowenthal

Thanks Andrew, I used your link for my raw juice, it was very straightforward!

I must say I’m surprised, I would think under acidic conditions the ethanol would be rapidly oxidized to acetaldehyde or acetic acid. Does this not occur? Or do the kinetics favor oxidation of the tannin before appreciable ethanol oxidation takes place?

Either way, I’ll give it a shot.
