I am struggling to source a tankless water heater for a homemade pastueriser.  There are lots out there but generally they don't seem to go above 60 degrees C.  Can anyone suggest one please or know of how I can override the settings?

Unfortunately I’m in the US so may not be available in UK.  We use a Rinnai commercial water heater.  It goes to 85C.

You would do this at your own risk (i.e.voiding warranty etc) but talk to your local friendly  plumber about fitting a thermostat that goes above 60C. I pasteurise at 65C using an electric sous-vide heater, but my setup is only hobby size. Most heaters have plenty of heating capacity to go above 60C but are limited by their thermostat setting (in your case 60C). Alternatively bypass the built-in thermostat and control the temperature externally by manualy turning it on and off (which is what the thermostat does internally) or by talking to your local friendly electrician/plumber about using something like an 'Inkbird" controller to control gas flow. Unfortunately we have to be a bit creative when products don't do the job "out of the box". Good luck!
