Bitter Honey, at 127 Railroad St. near the Rochester Public Market, has the industrial bones of its roots as a cavernous warehouse, and is accented by vividly colored Latin American art and dramatic lighting. The bar has a special focus on mezcal.
The carne asada tacos are a standout; flank steak is mixed with chimichurri, pickled jalapeños, and crumbled cotija cheese. Crisp, golden bite-sized pieces of white fish star in the Baja tacos; red cabbage and radishes add a fresh crunch. Camarones (shrimp) tacos are enhanced by a nutty pipián sauce made from pepitas (pumpkin seeds) and tomatillos.
Chef Steven Lara, the guy behind the Heritage Taco trailer, also makes his corn tortillas from scratch, using the two-day nixtamalization process. It gives the tortillas a depth of corn flavor and satisfying tooth. Fillings vary, but are delicious as well.
Alas, getting your hands on this fare takes some effort, as the The Heritage Taco trailer doesn't make the usual lunchtime. It does make fairly regular appearances on Wednesdays at Three Heads Brewing, but those will soon be coming to an end for the season. Your best bet is to check its Facebook page.
