RanchPizza is celebrating their grand opening of the new location in Downtown Hillsboro, Oregon, with a special ribbon-cutting ceremony featuring Mayor Steve Callaway. Organized by the Hillsboro Downtown Partnership, the event will take place this coming Saturday, April 27th, during the Hillsboro Farmers' Market at 1:00 PM at 142 SE 2nd Ave, Hillsboro, OR 97123.
Hillsboro is an exciting new market in terms of business growth, but what truly drew Ranch Pizza to this vibrant city was the undeniable charm of Hillsboro's downtown and the warm reception from the community. "It felt like Hillsboro chose us, and we are thrilled to become a part of this welcoming community," says Co-Founder of Ranch Pizza Eric Wood.
Ranch Pizza's journey began in 2017 as a pop-up restaurant, with humble beginnings of delivering pizzas on foot or by bike to nearby breweries and bottle shops. Founded by two friends, Richard Corey and Eric Wood, who sought to embark on their own culinary adventure, Ranch Pizza quickly gained a following for its unique square pizzas and complimentary ranch dressing.
Ranch Pizza proudly stands as one of the pioneers of exclusively serving square pizzas in Portland. Their pizzas are a fusion of flavors, drawing influences from Sicilian and Detroit-style pizzas while maintaining a distinctive twist. However, what truly sets Ranch Pizza apart is their commitment to serving every slice and whole pizza with complimentary ranch dressing, a signature touch that customers have come to love.
"We are thrilled to open our doors in Hillsboro and share our love for square pizza with the community," says Wood. "Our journey started with a passion for creating delicious pizzas and fostering a sense of community around our food. We are excited to bring our unique flavors and hospitality to Hillsboro."

A perfect 10/10 experience. Was my first time going and was blown away. We were seated right away and the accommodated a change to our reservation to seat us outside. Service was top notch, the right amount of attentive, welcoming, and professional. The food was so good. A casual feeling menu but executed so well. The fried food was light, crispy, flavorful, and not greasy in any way...
Sat outside facing the water and the Riverwalk. Great seats and atmosphere. Service was good, waiter let us take our time. I ordered the salmon and veggies pictured and my wife ordered the fried soft crab pictured. Both were delicious. Desert was the creme brulee, which was very good. Had not had one that good in a long time. Definitely worth the stop and go hungry.
No exaggeration, this is the best restuarant I've ever been to. The food was absolutely amazing. Try the Raviolis and crab dip. Boyfriend said the blackened catfish is the only catfish he's ever loved. The drinks were too good! I recommend Queen Anne's Revenge. The waitstaff was so fun and helpful. It was nice being inside out of the wind. And the interior was gorgeous. Such a wonderful choice for our anniversary dinner.
We've been twice now and had a great experience both times! You cannot beat the view on the river whether eating inside or out. It's a great place to people watch and see a sunset too. The grouper reuben sandwich is my all time favorite! We love the crab dip and gator bites as well. The shrimp and grits is huge and cheesy and the salmon sandwich is also huge and good although...

We found lots to love -- from appetizers, quesadillas, grinders and melts to salads, flatbread and wraps. Dinner is no longer included in the main menu. Look for a two-page insert, featuring favorites like sirloin, garlic chicken tortellini and chicken Parmesan as well as weekly seafood and other choices that make the most out of what is fresh and in season. There is also an insert for lunch specials.
I wanted to try one of the grinders served with the new potato wedges. The Mad Sicilian, with pepperoni, meatballs, banana peppers, red onions, provolone and homemade red sauce, caught my eye and was outstanding. The roll was soft and fresh, and everything inside was perfectly melted together. The new wedges were perfect for dunking in ranch or ketchup and would travel well if you get a meal to go.
Jennie settled on the southwest quesadilla, which was stuffed with blackened chicken, cheddar, corn, black beans, onion, tomato and scallions. She was nice enough to share a triangle with me, and it was perfect -- overflowing with ingredients, freshness and flavor.
