I've been using the Dictionary app that comes with Mac OS X and have
found it very handy to use. Is there a version of this localized to
Chinese? (Chinese/Chinese or Chinese/English)

There are no Chinese dictionaries with the built-in Dictionary.app. The next release of Mac OS X will offer a built-in Japanese to English dictionary, but there are still no Chinese dictionary.

However, you may try "Translateit" ( http://www.translateit.ru/), it supports the format of the Linux-based dictionary application StarDict. You may download the Chinese dictionary files from the Internet ( http://stardict.sourceforge.net/Dictionaries_zh_TW.php for Traditional Chinese and http://stardict.sourceforge.net/Dictionaries_zh_CN.php for Simplified Chinese) and import them into "Translateit". Then, you get a Chinese/English dictionary.

If you want a Chinese/Chinese dictionary, the online dictionary by the Minister of Education in Taiwan is not bad. http://140.111.34.46/dict/
