Doug gave me permission to re-post a few of my favorite Andy posts. In memory of his great love of chiles and the folks on the C-H list. This was from March 2010 - Andy's Devillish Egg Salad.

My Dr. said I should try harder on my low-carbohydrate, high-protein diet.  So, I decided to get into making egg salad.  Not just any egg salad of course.  First I decided that, if there were a difference, I would prefer a deviled-egg recipe for the egg yoke mix, rather than just an ordinary egg salad one.

After a bit of web recipe research, I found a site that was solely devoted to the making of deviled eggs!

My recipe is a modification of the one on the site. I am very happy with it. Eggs that bite back.

Devilish Egg Salad
------------------
6  hard-cooked eggs, peeled
1/4  cup Mayonnaise or Salad Dressing
1/2  tsp dry ground mustard
1/2  tsp malt vinegar #
1/4  tsp ground black pepper
1/8  tsp salt
1/8  tsp cayenne pepper
1/8  tsp (or more) hot chile powder *

# White vinegar could also be used
* The hot chile powder is optional. Use your favorite one; use as much as you like.

Hard boil the eggs, chill, then remove the shells, and rinse. Slice lengthwise once.
Pop out (remove) the egg yolks to a small bowl, add dry ingredients, mash with fork.
Add the mayonnaise and vinegar to bowl, mix thoroughly.
Coarsely chop the egg whites, add to bowl, mix.

Cover and refrigerate for up to one day before serving.
