Ozone Application for flour

I am a chemical engineer. i am searching for ozone Technology. i heard
that ozone is used for bleaching the flour. But it produces Nitrogen
too. But with PEM ozone doesnt produce Nitrogen. Have you an idea about
that? Where can i find the information for this subject?
