Good article EO. Btw, anyone interested in the quote below, something you should do ALWAYS, not just post-injury, there's a great book called
In Defense of Food: An Eater's Manifesto by Michael Pollan.
"Ideally, a post-injury diet would include as many unprocessed, whole foods (vegetables, fruits, proteins, whole, intact grains, dairy, nuts, seeds, beans, and legumes) as possible and as few processed, inflammatory, and high-sugar foods (chips, cookies, muffins, white bread, processed meats) as possible."
The book goes into great detail on what whole foods are, why they're so much healthier than refined food products, and how to get them. In case you haven't noticed, almost everything in the middle of the grocery store is processed. Stick to the edges of the store. Or better yet, buy as much as you can from the farmers market. Or sign up for a CSA. The health benefits are well worth the extra cost. We are lucky to have great access to both farmers markets and CSA in Charleston - utilize them.
