I'm considering making a podcast for the group and I was wondering if
anyone with audio experience could give a little advice. Specifically,
I'm looking for a nice mic (or two) as well as a way to capture the
audio from several audio devices on a Mac platform.

The ultimate (but not portable) is to get a separate recorder (like a
minidisc, a DAT, or whatever) and a mixer - I've often wondered what
my life would be like if I didn't have to worry about carrying my
laptop everywhere because I need a USB port to make my audio.
You'll never find a simpler solution than Quicktime Pro ($30) for
capturing audio - you can grab uncompressed, or hard-disk friendly
formats. QT also restricts you to do less editing because you just
kind of get the one timeline.
Sadly, I will be out of town yet again on Saturday, but maybe you can
come to Florida Creatives on the 20th or Likemind.orl on the 17th.
