Hi,
When deploying cfpayment to production I assume I can remove
/contrib /docs/ /tests /api/gateways/ all the ones I'm not using
Anything else I can remove?

That sounds correct, but given that cfpayment is explicitly configured, there's nothing that I'm aware of that could be exploited. I would keep the directory out of your webroot as a standard best practice for service layer and libraries, but there's no need to pare it back. The main drawback is that updating the library becomes harder so you tend not to do it...
