Setting the Z Max, where the nozzle bottoms out.

Does anyone know how to Modify the Z Max? That is, to set the point at which the nozzle will start printing?

I am trying to use an assortment of different thickens printing plates and need to adjust where the print starts.

On Delta WASP printers this is called Modify Z Max, in the Cerambot menu I can't figure out how to adjust it.
