Plantains are a staple in Cuban, Caribbean and West African cooking. Look up recipes for tostones (twice fried smashed plantains), platanos maduros (fried ripe sliced plantains) which are delicious on their own or as an accompaniment to black bean soup, mofongo (mashed boiled plantain dish of the Dominican Republic), fufu (mashed boiled plantain dish of Africa) and mariquitas (green plantain chips) for starters. Plantains are high in vitamins. The only draw back is that they are high in carbs (not good for prediabetics and diabetics alike) and that they are usually prepared fried.
BTW-- Aldi usually is a good cheap source for plantains.
Plantains are good green, yellow (semi-ripe) and black (ripe). Plantains can NOT be eaten without cooking!
