I ran into this recipe for Cloud Bread. Simple to make and carb-free. Some folks call it Oopsie Bread.http://www.sparkpeople.com/mypage_public_journal_individual.asp?blog_id=5591294

It is a fun and inexpensive alternative to store bought. I still love Glutino's English Muffins, but these cost next to nothing to make.
