Hi all,
Posting the recipe of palak paneer.
I took a full bag of baby spinach. U can take two bunches of Indian spinach, few sprigs of coriander leaves. Wash them well and blanch with a green chilli. ( u can also blanch few methi leaves with this. I was not having it so i sprinkled kasuri methi in the end)
Once cooled put the leaves in blender n grind on pulse not makong a thin puree but a chopped texture.
In a pan, add oil. Add a cinnamon stick. Add two finely chopped onions and 6-8 cloves of garlic finely chopped. Cook till brown. Add two chopped tomatoes and minced ginger. Cook till oil separates off. Add turmeric, chilli powder, dhania jeera powder acc to taste. Add the spinach mixture. Add half a spoon of amchur powder n garam masala and kasuri methi n salt. Give a boil. Simmer the flame n add grilled paneer cubes.
Cook till a little water is dried away n the curry is not too runny. If u wish u can add a spoon of cream in the end.
