Does anyone have a resource for cost of 1 ton of CO2 used in industrial and food grade processes? Trying to understand what (e.g.) a pub would pay per ton (and by extension, how that compares to price of CDR).

For instance, 425g CO2 in a Sodastream canister costs £23 (in the UK) — so ~£54 per kilo and £54,000 / $70,000 per ton. DAC at $1000 per ton seems pretty cheap in comparison?

Have seen $200/ton as a long-term average -- does that seem right? If so, would we expect DAC at $100/ton to be a source of CO2 for industrial uses?

$300-$400/ton in the US, see https://www.chemanalyst.com/Pricing-data/liquid-carbon-dioxide-1090#:~:text=However%2C%20there%20were%20not%20many,89.24%2FMT%20Ex%2DMumbai. (And search for “USD”)

Most of the food-grade CO2 comes from capture from ethanol plants, where the cost of capture is $20-$30/ton. Costs are really all about transport.

DAC can make sense for industrial uses if it is co-located with the user. But given the future ubiquity of inexpensive point source capture of CO2 in agricultural regions (due to capture from ethanol or fertilizer production), I have a hard time seeing it as a useful outlet for DAC for anything other than marketing value.

It ends up being quite dependent on many things.
Your soda stream calculus is good. In my Whole Foods, it's about $36,000/ton

In the US, commercial food grade CO2 sells for ~$100-120/ton. Costs will increase as a function of delivery costs - can be as much as $500/ton delivered.

In remote locations, it's quite a bit more. My understanding is that in Sri Lanka CO2 was ~$575/ton. Would only add $0.05 to a bottle of coke.
