Eu peguei o projeto da Caelum Stella no github  consegui criar a cobrança da sofisa porém cestou com um erro java.lang.ClassNotFoundException: br.com.caelum.stella.boleto.Banco.

Provavelmente o jar do stella não está configurado corretamente no classpath. De uma olhada e tente novamente
