I am in the process of replacing my Raymarine autohelm with a Raymarine
Evolution EV-100. I am keeping the older wind/speed/direction gauge and have
been reading about the three Seatalk standards - Seatalk1, Seatalk2 and
SeatalkNG. The autohelm uses the "NG" standard. There are "1" and "2" spur
cables to enable connecting the older gauge to the "NG" backbone. I am
trying to decide which spur cable to use but don't know if the gauge is a
"1" or a "2". How can I determine if my gauge is Seatalk1 or Seatalk2 so I
can purchase the correct spur cable?

I did something similar a few years ago, keeping the old ST60 speed, wind and depth info, but updating to the new EV100 wheel autopilot and an Axiom chartplotter. I used an E70196 NMEA 183 converter to the Radio/ ECU100, and an E22158 ST1-STNG converter inside the pedestal Navpod for the Axiom, P70, and ST60 stuff. So I think that the new parts all work with STNG and the old instruments were ST1. Surprisingly, the Axiom chartplotters use NMEA2000 connectors, so need a converter to tie into the STNG backbone.

I bought a tridata display and got rid of the depth and speed displays.
Then I used a Seatalk 1 to Seatalk NG converter, put tri data, wind, and
autohelm displays in the existing navpod with the converter in behind the
displays.

You will need to run a new cable for the autohelm display to talk to your
Seatalk NG things including the EV-100.

I added an axiom at the same time. Can’t remember exactly how it all
connects up anymore. But you will most likely need a Seatalk NG backbone
connector somewhere in the mix, and then you buy a "pigtail" that adapts
the NMEA cable on the chartplotter to the NG bus. Raymarine has really
good diagrams of how these things work together.

It is most likely Seatalk 1 but the easiest way is to look at the connectors on the gauges. One clear illustrated reference for the
various styles can be found at https://www.yachtdevices.com.au/raymarine-seatalk-protocols/

Stephen, great reference for Seatalk connectors.

While it has been a while since I did my upgrade (sounds similar to yours),
you can find my schematic here:
