1-2 boneless skinless chicken breasts
1-2 cups cooked rice
a green pepper chopped up
chicken broth
cornstarch
soy sauce
a little sugar
I cut the chicken up in small pieces and stir-fry it and the pepper in
a little oil. I am not a veggie person but I'm sure this would be good
with more and different veggies. Make the rice separately. When the
chicken is pretty well done, put like a can of chicken broth in a
bowl, a couple of spoonfuls of cornstarch, shake some soy sauce in
there, and a little sugar (optional). Most chicken broth you buy is so
salty you won't need much or any additional salt. You can add pepper
or any spices you like. Stir up the sauce in the bowl so the
cornstarch dissolves. Then pour it into the pan with the chicken and
peppers and let it cook for a bit, maybe 10 or 15 minutes. The sauce
thickens as it cooks. Then serve over rice and voila!! yummy yummy
