from the British Deer Society. The British food standards Agency has a
number of publications on hygiene worth checking out in pdf format
(for a true wild game business [not legal in the US--what you get as
'wild game' is restaurants is actually farm-raised], but still applies
to aging and butchering wild game meat and poultry for your home):
