Popularity is a little nebulous, but it's calculated based primarily on funding rate and age.  Loans that have just been posted get a high score, and loans that are funding quickly get a high score.  Scores are regenerated about every 5-10 minutes.

I just looked at our code from last April.  The only new sort option we've added since then is "Random." "Expiring Soon" has been an option since mid 2009 if not before, thought I think it might have been a little hard to find at one point while we were working on a redesign.
