Not really Bristol specific, but an energy audit means you have to know / find all these specs. You're asking others to do it for you.
You haven't said what your current battery capacity is, if that's been enough. And I'm not sure what 24/7 means unless you mean constant sailing, which brings up the subject of charging.
Too much missing info. What you need now is a BMS to see what you're using.
And something like a linear drive pilot will have varying usage depending on conditions,  there's no "one number" for it.

(amps/hr)for a below deck autopilot (Cetrek propilot 700)? My Cetrek is old
as dirt, company out of business, but I have all the manuals. All I can
find is that the system requires a 25amp antisurge fuse (from battery to
power interface) and a 3amp fuse between power interface & steering motor.
