As promised, the first London Gastronomy Seminar of the 2012-13 season will be on the subject of beer!

In keeping with our LGS traditions, we are pairing a prominent practitioner with a scientist for a discussion and tutored tasting.  The event will be held at the Kernel Brewery in Bermondsey, giving the opportunity to see the brewing process firsthand.  Due to the limited space, numbers are severely restricted.  Buy your ticket early to guarantee a place.

Dr Becky Clark will speak about her PhD entitled "Multimodal flavour perception: The effect of bitterness, sweetness, alcohol content and carbonation on flavour perception in beer".

While much is known about the impact of these individual components on beer quality, only a limited amount of knowledge exists concerning the interactions between these different sensory stimuli, especially carbonation. Becky's work focused on investigating the perceptual interactions between bitterness, sweetness, alcohol content and level of carbonation and their effect on volatile release and flavour perception. Her research involved using analytical, sensory and magnetic resonance brain imaging to understand the mechanisms behind flavour perception in a selection of model beer samples.

Before arriving in Nottingham where she studied for her PhD, Becky completed her Food Science degree at Manchester Metropolitan University, where she carried out a research project on salt reduction in chilled ready meals during her four year degree. Prior to university, she worked as a product developer for both Greencore and Northern Foods.

Becky has presented her research findings at a number of international conferences. She currently works as a sensory specialist in the Global Hair Division at Unilever.

 

Evin O’Riordain came to brewing via a PhD on Samuel Beckett and several years as a cheesemonger at Neal’s Yard Dairy.  Years of domestic experimentation led him to found The Kernel Brewery (www.thekernelbrewery.com) in 2009. He has since won numerous accolades including the British Guild of Beer Writers’ ‘2011 Brewer of the Year’ and Supreme Champion at the International Beer Challenge 2011 for his Export Stout.
