Firstly, thanks for the beer. I've just opened one...

It's good! It's not Hophead though. Next time we should leave out the crystal malt and use some lager malt instead (Munich or Vienna). I've done this with my most recent brew and it's loads lighter and a bit crisper and more biscuity. Also it needs more hops.

However, it's nice beer. Interestingly the 'head retention' is much better than my beers, there's still a satisfying amount of head right until the last sip. I reckon this must be the bottling.

What will we do when we have successfully recreated Hophead?  Then we will have to better it!  It's an interesting process though - and it's teaching us loads about what various ingredients do to beer.  

I still want to do an elderflower-flavoured beer, like Dark Star do (god, are we going to ape them forever?  This doesn't bode well for our planned nano-brewery...).  As I suggested last time, we could also fit in a bit of elderflower champagne making (strong and weak) into the downtime when the mash is boiling etc.  I guess we need to do this soon before the elderflower goes away.  What are people's availabilities like for Monday - Wednesday next week?  I know Hedvig can't do Wed, and we both might be busy at a permaculture meeting on Monday or Tuesday (depending on when people are free) but it'd be good to know when people can make it.  We also need to do the whole, you know, talking about what the BBC is for shenanigans.

Hello Boys and Girls,
I hope you are all enjoying the weather.
For me I have just been diagnosed with Gout so my interest in beer has changed somewhat!
So I will be looking to brew white wine going forward while I consider options for low purine beer production (possibly made from honey or molasses).
 
On a serious note I’m 44 now and to some degree paying the price for past excesses, those of you in your twenties and thirties take note. As some of you know I’m fat, but in my youth I was very fit . A competitive weight lifter in fact. I had a few years of excessive living from 18-27 or so and then “normal” consumption up to this point. So a normal guy, just like you?
Other points to note would be soft drinks, inc diet, fruit juice, lentils, yeast products (Marmite) and a whole raft of other stuff are high in the gout causing purines. All of these have featured highly, in fact daily, in my life.
 
So any thoughts on low purine booze?

I am in principle good for tonight also, maybe we can convene around 19:30 so we dont go too late but christine below will not miss too much.
 
HOWEVER...I think we need to get a hold of a couple of bits of Adam's kit if we are going to do this, principally the wort chiller. This bit of kit I think made the difference between beer that was definitely homebrew and beer that could pass fairly easily as the proper stuff!
 
I have been trying to get ahold of him but do not want to hassle the guy.  I would say that we should hold off the beer brewing unless we can get hold of these bits or can think of an alternative. The materials are expensive and it would be a shame to waste it on indifferent beer!
 
There are other brewing activities that could take place of course, it is not just about the beer!
 
I would finally suggest that BBC get hold of thier own wort chiller and a large pan as soon as possible.  I could probably get those bits in a week or two when my finances have recovered a bit from this weekend!

I agree about the chiller, but I thought part of the point of meeting up this time was to think about how we were working as a group, what we wanted to achieve etc.  Which could include what sort of stuff we want to brew.  

I definitely want those demi johns filled, but doing that today might be hasty.  

We could do a bit of a point luck, with booze, and talk through what we want to do.

Hi Guys,
 The link above still seems to be the best option for a stock pot so the question is 19l, is it enough?
The only larger one I found was 37L, £50odd and Aluminium, which I'm not fond of, outside of bikes and 'phone cases that is!

What do you all think?

The Stock pot is on order and will be availbule for the planned brew on the 15th (are we still on for this?)

In other news below is the basis for my alternative/Gruit beer, any thoughts or sugestions greafully recived.

    1.4kg   sorghum extract maybe some buckwheat as well
    225g. Light brown sugar
    225g. Dark brown sugar
    225g. candy sugar (medium colour)
    500g. Honey or maybe molasses

    25g. Dried Mugwort for flavor/bitterness
    25g. Dried Yarrow for flavor/bitterness
    25g. Dried Bog myrtle for aroma
    5g. Dried Marsh rosemary for aroma

I have no idea whether that will be nice or not, but I like your new, and somewhat medieval attitude to brewing, Ed.  If you want to use fresh instead of dried herbs, then I know at least two of them (mugwort and yarrow) and could take you foraging for them.  Bog myrtle I reckon I could learn but I have never heard of marsh Rosemary...  I'm very excited to see what this tastes like!  Yay for the experimental arm of the BBC.

The BBC is now the proud owner of a shiny stock pot!
 
Thank you Beth for your kind words and offers, I may take you up on the foraging optin. Does anyone know where to buy sorghum extract in the UK? it seems only to be so sale in USA.
I noticed in Tesco under the free from flavor isle a beer brewed from Sorghum although bittered with hops, I found this an interesting discovery and may use it as a base to aim for flavor wise although I haven't bought any just yet.
 
In other news it turns out on further reading I can drink wine, cider and larger without fear of my toe dropping off which is very good news of course!.

Ok so I added a couple of handfuls of cascade and a small handful of elderflower to the brew today.
 
I dont think we should leave it too long before bottling in this heat, all going well so far anyway.
 
Also the wort chiller has arrived so we have our own pan and chiller.

I used to be able to press corks into bottles by hand but it seems I'm getting old and frail and really struggled the other week, so I got me at bottle corker!
Cool huh?
I've twenty odd bottles of Cab Sav in a bin and this little thing will be a god send.
i really wanted a vintage French one but they are hard to come by.

No recommendations, but if you decide to do wine, I'd be interested to find out how it turns out.  I'd love to make strawberry wine, but all of the books say it's a bit rubbish (and don't explain why).  

I wonder if you could do something like strawberry and elderflower champagne (the quick kind).  I suspect that the strawberries would turn into a brown mush...  Strawberry vodka or gin?
