New folder structure for the download folders on BridgeDb

Dear BridgeDb developers,

I would like to propose a new folder structure for BridgeDb files (databases and library).

The new structure and organization will allow simpler access scripts to BridgeDb versions and better content separation. Eventually save some disk space. It will also introduce a "latest" concept as an anchor for scripts accessing always the latest content.
By the nature of this new approach it will also be easier to publish data to a Fair Data Point.

Do you see any downsides to this approach?
I would appreciate your thoughts before 3/June.

Denise, Marvin and I need this to start developing (simpler) scripts for the deployment of BridgeDb webservice and for the Docker version. This would greatly help development and future maintenance.
