just recently I bought D2007 professional - been following Delphi since 1997
(D2) and using D7 since 2004.
Looks good and I like the possibilities to setup your screen, when you use 2
monitors - set aside, that the windows on the second screen get squeezed to
the left of the secondary monitor when delphi starts, but that's no big
problem.
What annoys me is the fact, that D2007 seems to ignore my settings for
"disabled packages".
To speed up the delphi load process, I usually disable almost all packages
(about 80 bpls installed) as a default.
Whenever I need a package in one of my projects, I enable it for that
project.
So after installation I disabled most packages (with no project active - as
standard project options). To check this and the Delphi startup time after
that, I restarted delphi - all packages loaded again.
I tried several differens ways to disable the packages. I also tried setting
my user directory back to default - no results visible.
Does anyone have any clues?

Delphi 2007 ignored my settings for project and even general while having
UAC activated (I'm running Delphi 2007 on Windows Vista) after I
deactivated UAC took my settings for granted and compiled as planned ...
but as I say ... it could be something different ...
furthermore since delphi2k7 differences between general and project
settings you should be able to tell each project which packages it needs
and these should be loaded if you activate/start a certain project ... but
that mechanism seems not to work either or to damn stupid to get it
working ...

I have similar findings with RAD Studio 2007 Arc on Windows XP Pro.
Wether it is the Default Options or the project specific options, the
IDE ignores both of the disabled packages, even though they are listed
in "Excluded_Packages" list of the corresponding
DefProject.bdsproj/*.dproj file. I have already made a QC60832 about
this problem.
I really hope CodeGear is fixing this fast, 'cause I agree: it is very
annoying!
