I hope I can help you sort this out.
There is no fisheye equirectangular camera setting as you can see in the screenshot I've attached.
If you're looking to make dome masters (circular images distorted for projection on a planetarium dome), you'll need the Panoramic Equidistant Fisheye setting.
If you're looking to make images for VR or creating an environment map, you'll need the Panoramic Equirectangular setting.
Here's a quick breakdown for setting your camera type.
Select the camera as the active object in the main scene editor window or in the outliner as Ron has described.
Under the Camera Settings Tab (its icon looks like an old style movie camera), selected "Panoramic" from the choices of "Perspective/Orthographic/Panoramic."
Beneath these, you'll be able to select which camera type you wish to use.
