Is there a way to have the "Country" field in Address Book the be
automatically filled? Maybe from the 'Language & Text' panel. Or from
Address Book >> Preferences >> General >> Address Format.

Secrets doesn't add new functionality, it merely makes existing hidden
(Secret) functionality easily editable. Address Book doesn't yet have
a "bulk edit" feature, so Secrets cannot change this.

Thinking about your specific request: you ask "automatically filled"
but from what information? How does Address Book reliably know which
country your contact is in? You may not travel much, and so have all
your contacts in a single country, but many people do travel and have
contacts globally.

That said, you can edit multiple contacts via VCard Export &
TextEdit.

It is "no secret" google is indeed your friend :)
