Hey Jeff,
I'm not doing the instructional piece of what you're looking at. We're using
OO, Drupal, WP and Moodle though in our district. I would suggest that you
take a look at the developer tools like MAMP, XAMPP ect that allow local
lamp installs of Apache, MySql & PHP.
Kids could install, manage and kill to their hearts content, and be back up
and running in no time. You could have clean installs for both Wintel and
OSX. There's 'no-install' packages for both so you could have a read only
directory on your network that would allow kids to simply copy a clean
install to a local machine and off they go.
I use a MAMP copy from moodle.org to run Moodle, Drupal and WP on my local
machine for developing. I regularly develop, kill and reinstall in a few
minutes.
