I'm not sure if I mentioned this already, but I'm looking for a UI that
can manage and stream music. On the detail of it, I have some Christmas
music I'd like to turn into various playlist stream where I can manage
the randomness. But, if my family wants to pick the songs they want to
listen too, they can.

I know, I probably sound like I'm behind the times...I am.

I've heard of Plex, but I think I have to have a subscription. Wondering
what other people use, like, and dislike.

I use Plex with a tv tuner and over the air antenna to record tv. It works great and I love it. It even has commercial skip built in. I've heard it can do audio, but I've never tried it. For audio I've always just uploaded my CDs to Google play or used Spotify. I find that with a good adblocker I hardly ever hear any ads when playing music from Spotify in my browser.

Eric,
I thought about doing something similar a while ago.  I looked hard at mpd (https://www.musicpd.org/).  I had it installed and set up a number of years ago, but I haven't messed with it since.  I see that it seems to continue to be actively developed (at least in 2019).
I'd love to set up a whole house audio system, but I'm so behind on projects right now that I'm not taking on anything extra.
James
