I have had no luck in finding any info on the Web pertaining to why fungi
produce toxins or the array of other chemicals that are produced. Is this a
defense mechanism? Are there any resources out there on this subject?

I'm sure there is speculation. Maybe in some of the primary literature.

Maybe they're not toxins as such to the fungus but serve some other function.

Break down products of proteins and amino acids, maybe?

As reported in a different ng, fungal toxins are probably
self-defeating. Nonetheless, all fungi produce mycotoxins. Some both
humans. Some don't.

You might try Dr. Denis Benjamin's "Mushrooms: Poisons and Panaceas"
for more information on mycotoxins.

Most mycologists (and others) who have actually grown mushrooms
recognize that the average breath of air contains about 10,000 spores
(Stamets & Chilton, The Mushroom Cultivator). Thus there is
considerable competition for the same potential substrate.

Mycotoxins allow faster-growing fungi the lion's share of the food.

Hi Ken,
One popular approach is that toxin-producers have a higher fitness in
concurrence with, f.e. bacteria or other fungi. Maybe other "produce" toxins as
breakdone remnants of some proteins, as Dr. Chuck already mentioned. So this is
a wide field ! Why are You interested in it ??? :)
