Hungarian Cod
Categories: Seafood, Hungary, Magyar, Euro, Ethnic, Main dish
Yield: 4 servings
1 1/2 lb Cod or halibut 1" thick
1/2 c Yogurt
1/2 c sour cream
2 tb All-purpose flour
1/4 ts Hungarian hot paprika
1 ts Hungarian sweet paprika
1 1/2 c Fresh mushrooms sliced
1/2 c Onion chopped
2 tb Butter
1/3 c Dry white wine
1 ts Fresh dill weed
1/2 ts Salt
Remove skin & bones from cod.
Cut cod into 1" cubes.
Set cubes aside.
Mix yogurt, sour cream, flour & paprika in a small bowl.
Set this aside.
Saute mushrooms & onion in hot butter until tender in a 10" skillet.
Add fish, wine, dill & salt.
Bring just to boiling.
Reduce heat then simmer, covered until fish just flakes with a fork.
Remove fish & mushrooms using a slotted spoon.
Stir yogurt mixture into skillet.
Cook while stirring until thickened & bubbly.
Cook & stir for 1 more min.
Return fish & mushrooms to sauce then heat through.
Serve over noodles, boiled potatoes or rice.
