Montreal French Onion Soup
Categories: Soup, French, Ethnic, Canadian, Cheese, Side dish
Yield: 6 servings
2 tb Butter
5 ea Onions sliced thinly
1 c Sauterne or Reisling wine
6 c Chicken broth
4 c Water
3 ea 3" pieces baguette 1/2'd diagonally
2 c Gruyere cheese grated
Salt pepper to taste
Melt yourbbutter in a heavy casserole over med-low heat.
Stir in onions. Cover then cook while stirring often until onions are
very tender but not browned.
Add your wine then cover & cook until liquid has evaporated & onions
are pale golden while stirring occasionally.
Add broth & water.
Bring to boil over med-high heat.
Reduce to med-heat then simmer for 15-18 mins. until flavors blend.
Season soup to taste with salt & pepper.
Pre-heat your broiler.
Ladle soup into flame-proof bowls.
Top each with 1 baguette piece.
Sprinkle liberally with cheese.
Broil until cheese melts & bubbles.
Serve hot with lots of hot French & butter.
