Racuchy z Dynia - Polish Pumpkin Fritters

Yield: 4 servings

14 oz Fresh pumpkin coarsely grated
2 c Buttermilk
3 ea Eggs
1 ts Salt
14 oz All-purpose flour
2 ts Baking powder
Shortening for deep frying
Confectioners' sugar

Heat your shortening to 350 deg-F.
Mix flour with baking powder.
Beat buttermilk with eggs & salt until well-blended.
Gradually add your flour/baking powder mixture.
When your batter is smooth then add pumpkin.
Mix well to combine thoroughly.
Drop portions of batter into hot shortening.
Fry on both sides until golden brown.
Drain on paper towels then dust with confectioners' sugar.
Serve immediately with sour cream & honey.
