Beignets des Peches - Fried Peach Fritters
Categories: Fruit, Dessert, Pastry, French Ethnic, Euro
Yield: 1 batch
8 ea Firm peaches*
Sugar
8 oz Cold water
1 lb Flour
2 ea Egg whites
1 1/4 oz Butter
Olive oil as required
Powdered sugar as required
*NOTE: Use canned peaches but only if they are firm.
Melt butter.
Peal, pit the 1/2 some firm peaches.
Toss peach 1/2's into a bowl of sugar.
Stir to coat peaches being sure not to break them.
Put flour into a bowl then gradually stir in cold water.
Mix stiffly beaten egg whites into batter.
Add butter to batter.
Bring olive oil to a good heat in a heavy skillet.
Dip each piece of peach into batter.
Fry peach pieces in hot oil.
Remove peach pieces from oil when lightly browned.
Drain on paper towels.
Lay drained 1/2's into a baking dish.
Sift powdered sugar over peache 1/2's.
Glaze peach 1/2's by placing them in a hot oven for 2-4 mins.
Serve hot.
