4 c Sour cream
1 tb Butter
1/2 c Caraway seeds
Salt to taste
Float an earthenware bowl in a hot water bath.
Add butter & 1 tb of sour cream at a time.
Blend with wooden spoon until all sour cream has been added & a white
but solid mass has formed.
Add caraway seeds & a pinch of salt.
Blend in last 2 ingredients well.
Place kastinis into small bowls then refrigerate 2-4 hrs.
Serve kastinys on hot boiled potatoes, black bread or toast.
*NOTE: Kastinys is somewhat salty yet with a delicate sourness.
