Sklindziai - Lithuanian Pancakes
Categories; Lithuania, Ethnic, Balt, Bread, Euro, main dish
Yield: 1 batch
1 c All-purpose flour
1 tab Sour cream
4 e Eggs separated
1 c Milk
1/2 ts Salt
Beat your egg yolks until light.
Add flour, sour cream, milk & salt then mix until smooth.
Beat egg whites in another bowl until stiff but not dry.
Fold your egg whites into yolk-flour mixture.
DO NOT deflate mixture's volume.
Add a small amount of butter to a cast iron skillet.
Portion onto it 2 very generous tb of batter.
Fry until golden then flip & fry until other side is aalso golden.
Serve hot with honey, syrup or preserves.
