Memories of Knapps

[Pat 1978]

I worked for Bill Knapps from 1978 - 1980 and did just about everthing
there but manage the place, I hired in as a line cook, where I was
able to pick up shifts as overnight janitor occasionally. I originally
hired in on my 18th B-day in the Farmington Hills, Michigan location.I
became a third-person shift leader trainee and transfered to Rochester
to help open their new location.

The company was great and I still have vivid memories of the people I
worked with there. The food also like so many others made an
impression on me, and it didn't take long before I developed a passion
for food making it a carreer choice. Today I am a chef, and opperate a
catering company. I have duplicated several of the recipees for my
catering company today,

I also would love to be able to get a hold of an old menu, or uniform
from the old days, so if there is anyone who has any knowledge of that
would be possible that would be great!

My first birthday cake was form Bill Knapp's!

 I've been missing their chicken fricasse and biscuits since they closed.

 I've got the biscuits down pretty close, now I need to figure out the fricasee.

 If ya have any pointers I'd be ever in your debt!

 One of may favorite restaraunts growing up!
