FTC Standard Disclosure] We received no compensation for this post. I am fortunate to cook with the Flavor Anonymous guys at Memphis in May each year and recently they were kind enough to send me a box of their exciting rubs and seasonings.

The Gringo Jalapeno sauce is a cream sauce with fire-roasted jalapeno and the Dirty Gringo rub from Flavor Anonymous. This rub has Southwestern flavors with smoky chiles that bring a lot of flavor to this sauce. I originally made it as a dip for hot wings but it also goes great on burgers.

Medic Rescue is a provider of emergency medical services (EMS) serving the communities of Beaver County, Pennsylvania. Based in Bridgewater PA, Medic Rescue is a non-profit ambulance company, staffed by over 100 paramedics, emergency medical technicians and wheelchair van personnel plus 25 support personnel.

Their growing Stinky Gringo pre-mixed margarita and tequila brand has helped them survive financially in the aftermath of a four-alarm fire that destroyed their landmark Pizza Man business in Milwaukee a year ago this week.


The flames consumed the building that housed Pizza Man, at E. North and N. Oakland avenues. Before they realized it, their catchy, kitschy, Stinky Gringo brand - complete with mascot Mr. Stinky - was about to become a bigger part of their lives.


"The Stinky Gringo brand is one of the absolute hottest in the store," said Rick Laev, owner of Ray's Wine & Spirits in Wauwatosa. "It's also the highest proof of any pre-mixed margarita out there, and people just love that extra kick - gives it extra flavor.


"I was a margarita geek," constantly mixing and experimenting to create the best-tasting concoction, Mike Amidzich said. He spent seven years perfecting his recipe, often mixing up batches in the basement of Pizza Man and testing them out on friends and family.


Once they made the decision to take the product to market, they held a contest - with a $2,000 grand prize - for students at the Milwaukee Institute of Art and Design to create a new logo for the brand. They had 50 entries. The winner included the company mascot, Mr. Stinky.


Insurance covers only a portion of their fire losses, and coming out of the recession there aren't too many banks willing to lend money for a new restaurant - even one with the history and name recognition Pizza Man had, the Amidziches said.


The brand is marketed by Diageo, a global beverage conglomerate based in the U.K. The company employs 20,000 people with offices in 80 countries and manufacturing facilities in the U.S., Great Britain, Ireland, Canada, Spain, Italy, Africa, Latin America, Australia, India and the Caribbean.


The market is huge. Retail tequila sales in the U.S. were worth about $3 billion in 2009, said David Ozgo, chief economist for the Distilled Spirits Council of the United States, a Washington trade association.


"It makes a huge difference," said Michael Greguska, co-owner of the Discount Liquor stores in Milwaukee and Waukesha. Greguska says customers are familiar enough with the brand to ask for it by name.


Deanna Amidzich says her pre-mixed margaritas have a selling point no one else's has. "Ours has the highest proof," she said. "We have the most booze in the bottle. If you figure it out price-wise, we are cheaper than anyone else based on the booze that you get."


The company usually gets two or three complaints a year from someone offended by the name. "We're picking on ourselves," Deanna Amidzich said. "It's goofy. It's fun. It totally is the definition of Mike and I. We're fun and kind of quirky people," she said.


"It's traditionally been considered disparaging, pejorative, etc.," said Jeff Kirsch, who teaches Spanish and Portuguese at the University of Wisconsin-Madison. "However, it can be used neutrally and it depends a lot on the context and who's saying it."


"The UCSD administration has failed to drive The Koala from campus," said Thor L. Halvorssen, executive director of FIRE, "but the threat of similar proceedings chills free speech on UCSD's campus. Students now know that they risk an inquisition from UCSD administrators who disregard the Bill of Rights when they don't approve of what is said."


The Koala is a satiric student humor publication. In November 2001, a student photographer (not a member of The Koala) sent it photographs that he had taken of a meeting of a student group, MEChA (Movimiento Estudiantil de Chicanos de Aztln). The Koala then used the photographs in a critical parody of MEChA's president, Ernesto Martinez. In February 2002, UCSD charged The Koala with violating the Student Code's prohibition of "disruption of teaching, research, administration, disciplinary procedures, or other UCSD or University activities."


No such consideration was given to The Koala. In the 1995 Voz Fronteriza case, the UCSD administration issued a formal statement that the University was "legally prohibited from censuring the content of student publications." In March 2002, Vice Chancellor Watson wrote to "all academics...staff...and students at UCSD": "We condemn The Koala's abuse of the Constitutional guarantees of free expression and disfavor their unconscionable behavior."


UCSD's "Principles of Community" modify the First Amendment: "We affirm the right to freedom of expression at UCSD. We promote open expression of our individuality and our diversity within the bounds of courtesy, sensitivity, confidentiality and respect." Ironically, MEChA, by instructions of its National Constitution, orders each individual chapter to "orient" members around "El Plan Espiritual de Aztln," which denounces "the brutal 'gringo' invasion of our territories" (an "Aztln" nation that includes the Southwestern states of the United States of America) and refuses ownership of land to "the foreign Europeans." "FIRE," Halvorssen observed, "would protect MEChA's right, under the U.S. Constitution, to argue for such a view, but we note that UCSD hypocritically and selectively violates both its own obligations to that Constitution and its own unconstitutional restrictions of speech on behalf of 'courtesy' and 'sensitivity.'"


In its proceedings against The Koala, UCSD showed far greater interest in convicting the publication than in upholding its obligations to the First Amendment. On May 22, 2002, the day that UCSD received its letter from FIRE, the UCSD Judicial Board opened the trial to the campus media. The UCSD administration refused to participate and left the hearing. Two days later, Aguilar, who had applauded Martinez, nullified the hearing and ordered a retrial behind closed doors. That secret trial was held on June 5, 2002. The dismissal of the charges nominally stems from this hearing.


"FIRE has been our staunchest ally throughout this ordeal," said George Liddle, editor-in-chief of The Koala. "Thanks to FIRE's efforts, the constitutional rights of The Koala have been defended against an administration seeking, in any way possible, to silence and disband our publication."
