Install BBB on a local machine without public IP

Hi all,
currently I am trying to install BBB on my local machine (laptop) for development purposes.
When I try to use the command for the install script : 
wget -qO- https://ubuntu.bigbluebutton.org/bbb-install.sh | bash -s -- -w -a -v bionic-24-dev -s bbb.example.com -e in...@example.com
Let's Encrypt always makes problems because I cannot give a valid FQDN. 
What should I do in this case? Has anyone BBB locally without the need for an external server with a valid FQDN and an IP-address?

you can't use le for reasons that should be obvious, you'll need to provide your own certificate

that is possible though takes extra work, and you can't omit the SSL if you're thinking about that.
