I did some googling and there was a previous thread on this
Also, when you upgrade, BigBlueButton makes a local database of the recording status (instead of always fetching it from BigBlueButton) to speed up access to recordings. On initial update, the creation of this database runs as a background cron job in Moodle. Do you have cron jobs enabled?

Try the above and let us know if that gets your recording appearing.
