So we have the following as a server:
Ryzen 5959 (massive single core performance) with 32 Threads 256 Gigs of Ram and a 10Gbit connection.
What we are planing to do is: 2-4 open cameras and abotu 450-500 viewers.
What is there new in bbb 2.3 to give the best chance of performing this?
3 kurentos are already activated.

You will have to test your setup. It's the only way to be sure. There is a tool for automated BBB performance tests out there.
In BBB 2.3 you can set up multiple node.js backend processes to increase throughput for event handling (default is 2).
