you actually don't need to change anything in the metadata.xml file.
If you want to reassign a recording you have to edit the bigbluebuttonbn_logs table for the bbb-plugin in the database.
It may be, that by changing the metadata.xml file you do reassign the recording, but this would be just by chance, as it happened to me.If you really want to be on the safe side, change the values in the db.The different meta-values (bbb-context, bbb-origin, etc) do not play a role when/if you reassign a recording.And, even thought this may sound weird, the externalId value doesn't matter. This id is generated by moodle, but it would not play any role in the reassign process.
thanks, I played arround with that on our test system and could not get this to work. I changed everything inside the logs table but the recordings did not show up in the new course - they did disappear in the old one though. ;-)
So I think, I did not understand how to correctly assign the recordings to a BBB block in moodle.
I ask myself if it would not be easier to import the recordings through the import option of the BBB plugin and after that change the values so the imported recordings look as if they where native recorded.
@Jesus Federico or anybody who knows the details ...would that be possible?
Additionally I see a security problem with enabling the import option as all courses in moodle are showing up for import for everyone. In my understanding only courses I own should be shown unless I am logged in as admin who can see all courses.
Maybe this behaviour can be changed in the moodle 4 core for future.

reassign a recording to another meeting / room / moodle course?
And regarding moodle, would I have to do anything additionally in the
moodle db, or will this be reread automatically from the metadata file?
I see the meetingID more than one time in the file and additionally the
external meeting ID and there also may be a context ID.
Do I have to change everything - or which IDs are used for the assignment?
