We all know Ghee, but most of us (myself included) are sometimes
confused about whether to take it or not.

This confusion is because of the conflict between what we learnt from
our ancestors (Ghee is a must) and what the doctors recommends (Ghee &
milk should always be avoided).

To understand it better, lets understand the economics.

To make 1 kg of ghee (june-2012, rates), we need about 25 litres of
milk. In Delhi (India), cost of 1 litre of milk is Rs. 40.

25 liters of milk will cost = 40*25 = Rs. 1000

This is just raw material, Include the manufacturing cost and
packaging cost.

A pure ghee, created from the vedic process should cost around Rs.
1000. Companies are selling Ghee @ Rs. 350 - Rs. 400 per kg.

The devil lies in the process of making of Ghee. Lets compare the two
processes of making Ghee, The Vedic process and the modern factory
process.

Your assumption is not exactly correct.
Actually milk is used to get the 'milk cream'. Once the 'Milk Cream' is taken out from the milk, the milk can also be used to make curd or lassi or can be taken directly.
So It needs 'Milk Cream' or butter to produce Ghee.
Now the costs of 1 KG 'Milk Cream' is Rs 220- 250 in market. 1 KG 'Milk Cream' can produce half (1/2) kg of Ghree(roughly). The process for the creation of Ghee produce Lassi and Ghee both from the 'Milk Cream'. So Lassi can also be used for sale.
Now the actual price for the 1 Kg of Ghee should be from Rs 400 - Rs 500.
And as per the latest cost of Pathmeda Ghee which is Rs 630. is far high, which is due to the hygiene and the purity  of the milk which they use for the preparation of Ghee.
