鸡蛋营养丰富,生理价值高。但是有人喜欢吃生鸡蛋,误认为生的比熟的营养好,还有人认为生鸡蛋能润喉,清嗓子。事实上,吃生鸡蛋,各种营养成分难以吸收,并对人体产生不良影响。
生鸡蛋的蛋清中含有一种对人体有害的碱性蛋白质抗生物素蛋白,在肠内与生物素结合成为一种牢固的复合体,没有活性,人体无法洗吸收,最终引起人体生物素缺乏症,表现为全身乏力,食欲不振,呕心,呕吐,感觉过敏,皮屑性皮炎等。
吃生鸡蛋,会增加肝脏负担,因大量没有吸收的蛋白质在大肠内腐败,产生大量有毒物质,吸收后要经肝脏解毒,对肝功能不好者,可能发生氨中毒,出现肝昏迷。
鸡蛋加热后,抗生素蛋白及被破坏。还可以杀灭病原菌。
