Happened to notice in P'Shemos that Unkelos explains 'Ish Mitzri' differently in two different places:

First is in Perek 2 Posuk 11 discussing Moshe going outside &seeing the Mitzri he would go onto kill, where Unkelos says 'Gevar Mitzri' whilst second is in (Perek 2) Posuk 19 concerning daughters of Yisro describing Moshe, who saved them at the well, as Ish Mitzri where Unkelos says 'Gavra Mitzro'oh'

is this a feminine version just because females are speaking?

גברא מצראה is not feminine, but the non-construct form (both the word גברא and the word מצראה could be used independently) and literally means a man, an Egyptian.  גבר מצרי is the construct state- an egyptian man.

It could be that Yisro's daughters main message was that someone helped them- his origins were of secondary importance. To Moshe however, it was a great concern that a Jew (his 'brother') was being beaten by a non-Jew.
