is BeagleV already available?

It would be interesting to see some projects in IoT with risc-v. Maybe
something involving https://github.com/lf-edge? (though, it seems
starfive doesn't have hypervisor instructions).

No. Just a few right now. I'm looking to reserve some in March/April when there are a few more for GSoC. General availability won't be until September.

I believe some companies are trying to sell LF Edge products and they
are also core devs there, e.g.: https://zededa.com/
But since starfive doesn't support virtualization yet, I don't think it
is possible to do something meaningful for example with LF Edge EVE project.
Though, there are other projects in LF Edge, here is their roadmap:

Would love to help mentor for BeagleBone AI & BeagleV projects.

Is there any possibility of adding any BioMedical project this year?

As  COVID-19 pandemic hit us so hard with the scarcity of Ventilators and BioMedical Equipment. I believe It would be awesome to see a platform coming from BeagleBoard.org for patient monitoring OR something like that. I am up for mentoring and working on such a project if BeagleBoard.org is ready to take the challenge.

Happy to see great projects coming from BeagleBoard.org this year, very excited for BeagleV.

I have used qPCR machines but never got the chance to work on one. I will have to look into the project to tell you where I can help and if we can take that as a project for this summer OR maybe next summer depending on the setup complexity it comes with.

I am assuming you referred to me when you asked to put time on your calendly, If that's the case I'll do it ASAP. Please confirm.
